Nio Ro Mien

John and I with his beef noodles! He made them specially for me to enjoy after my Chinese class. They're Vietnamese style and delicious. They make me miss my Taiwanese family in Kaohsiung.

I have a slight obsession with beef noodles, but I truly find that soft, green vegetables are not the easiest to eat with Incognito Braces.  I find the same with tomato skin, actually.  It’s like I can’t quite break through it if it’s too soft!

Well, tonight at my Chinese class, my teacher’s husband, John, made me homemade Nio Ro Mien (beef noodles….direct translation: cow meat noodles).

I love beef noodles so much because my Taiwanese family (a family that took good care of me while I lived there) own several amazing beef noodle restaurants in Taiwan and China.    The thing is, as much as I love stewed beef, it always gets stuck in my brackets.  It take a lot of sucking to get the fibrous meat out!

I love eating with chopsticks! Yeup, you can totally see my Incognito Braces from that angle, but who really eats like that?! No one except me in "super-exaggerated eating mode" for pics.
